Description
The unmistakable flavor of our Lonza comes from its traditional production process: it begins with a cut at the seventh rib, then is expertly trimmed by hand and carefully tied. After an initial drying phase, the Lonza is moved to the cellar to complete its natural aging. This process gives the product its unique and distinctive aroma.
The cut of meat used, particularly rich in fine marbling, ensures that the Lonza remains tender and delicately flavored despite the long curing period.
It can be enjoyed as an appetizer, for example paired with a good pecorino cheese, or alternatively served as a tasty main course.
The weight of approximately 2.5 kg may vary, as this is a handmade product.
